Everyone has heard of sushi before. Some people like it and some people don’t. Now there is a trend going on in Japan where sushi dishes are being designed in a colorful and geometric way. These particular dishes are called “mosaic sushi.” This type of sushi has vegetables and fish organized close together like tiles, colorful rice blocks, and all sorts of geometric designs that highlight the diversity of each food group of the dish.
For example, you’ll see pale pink tuna pair together with orange salmon stripes and cubes of green vegetables balanced together with thin cucumber strips. Pictures of these mosaic sushi dishes are trending like crazy on Instagram.
